Tiptoe Through the Tulips?
I ventured outside for a brief moment this afternoon. Look what I found!
I don't know whether they're tulips or daffodils. Don't care though, I'm just glad they were there. I was shocked and amazed because most of our property still looks like this:
Depressing, I know. At least Sassy is free to roam. Sort of.

Cats and Dogs.
It's raining Cats and Dogs here people!
Seriously folks, the rain is coming down in sheets. You can hardly see out the window for the rain. I am so happy.
Avalanches of snow and ice are sliding off the roof as we speak.
Aaaand the oil delivery truck was here bright and early! They only deliver in this area on Thursdays. Guess I put the fear into them. Who knew?

I'm Really SIck of the "S" Word
Gentle Readers,
I hope my last couple of posts haven't mislead you to believe we lead a totally bucolic existence here at the LC. Some commenters have had dreams of a Winter Wonderland here and they are packing their bags up to visit as we speak.
Here's a photo taken last night at around 10pm.
My husband had to brave through the drifts to care for his beloved Sassy.
Here is Sassy in happier times:
Oh, wait, that's not Sassy. That's some New York police horse I happened upon.
Hi Sassy! I haven't seen you for a while.
This is my husband all geared up to make the trek to the barn to care for Sassy:
Then he went out the door carrying two buckets of water.
I'll see you when the snow melts, Sassy.

He Said She Said
The fuel company that delivers the oil for our furnace called today. The gentlemen on the other end of the line informed me that the driver couldn't get down our driveway because it was too slippery. Aghast, I took my trusty camera with me and went out to investigate.

Pie Hole.
As predicted, today is a snow day. To make up for mocking my husband yesterday, I baked him a pie. At least I will have one less question thrown at me today.
Coconut cream pie! Made from scratch I might add. Although I did cheat and use a store bought crust. You can't have everything.
This pie filling is so easy to make. I know you want the recipe right? This comes from an old cookbook that belonged to my mum. She always called it the Victory cookbook although that's not the name of it. I think it must have been published during the Second World War. It's one of those ones that say in the recipes bake till done, use a hot oven, flour to roll, etc. You have to kind of guess for some of the directions. However, I'll do my best to translate for you.

Cocoanut Pie (that's how it's spelled in the book. Is that right?)
2 egg yolks
5 tbsps. flour (level)
3/4 cup sugar
1/4 tsp. salt
1/2 cup milk
1 cup shredded cocoanut
1 tsp. vanilla
2 egg whites for top (I use three)
1 1/2 cups scalded milk (not boiled just bubbling hot around the edge of the pan)
Method
Mix dry ingredients with cold milk and add to scalded milk. Add cocoanut and vanilla after cooked.
Clear as mud, right? Okay. Bring the mixture to a boil stirring constantly. When finished pour into baked pie shell. Beat egg whites with 1/3 cup of sugar and spread on top of pie. Sprinkle some coconut on top and brown meringue in 400F oven until desired brownness is reached. This doesn't take long! Enjoy!

Good Ole Snow Days.
Over the last few days the temperatures have been freezing outside the LC. We sit huddled around our fabulous fireplace insert in the kitchen.
Toasty warm we are at a balmy 21c while it looks like this outside:
At -18c the deer run around our yard with wild abandon.
We have had a snow day twice in the last two weeks. We're gearing up for another one tomorrow or Friday.
This is our house last winter after a heavy snowfall.
Now, snow days are great for kids who want a day off from school. But for teacher's wives? Not so much.
Husband:
Me: Is it bedtime yet?

Snow!
Gentle Readers,
It has finally happened friends: Snow. Here at the LC. I am not happy. I don't like snow.
It's like a winter wonderland!
I think we're in Narnia!
Here's our gigantic tree. Can you see where the branch broke off?
You can see the size of the tree on the left. Our potting shed is center.
Tiny paw prints in the snow.
Okay, I will admit snow is pretty. Especially when I'm standing at my front door and don't have to venture out!
Here's where I'll be found:
