Sweet Saturday.

Since I started on my vegan path eight weeks ago but who's counting  my husband has been very supportive.  He agrees to eat vegan at home but reserves the right to order whatever he likes (MEAT!) when we dine out once a week on date night.

However, he does miss my baking.  A lot.  So after much weeping and wailing and  gnashing of teeth (by me) I endeavoured to find some yummy recipes for sweets.  I think I hit the jackpot.

Magical Coconut Cookie Bars

I used the recipe from this cookbook:

Small in stature but big in delicious recipes.
Seriously.  Head over to amazon or your local bookstore and peruse through the photos and recipes and you will be surprised.  In a good way.

Peanut butter and chocolate. Seriously.
NYC Black and White Cookies

These squares were To.Die.For.

My husband is one happy man.

My first black and white cookie was in a NY deli. The line moved so fast, I hadn;t made up my mind when I go to the front and I got yelled at by a customer for delaying the line. I saw these saucer sized cookies and pointed and said I'll take that....my goodness it was good. That book looks great. Good on you for beign vegan. It's the right thing to do.

Those look awesome, I'll have to get that book. Do they make sweetened condensed soy milk?

These treats look delicious! I am gluten-free and have had to learn to bake and cook in all new ways, too!

Your husband should be happy with that selection of sweetness!

I've never had a New York black and white cookie. Actually, now I think about it, wasn't there a Seinfeld episode on the Black and White cookie. What do they taste like?

Biscuit. We call them biscuits.

My you're brave. I could never do vegan. I could do vegetarian, but it's almost impossible surrounded by two meatatarians!

Kudos to you Deb! I think going vegan is one of the most difficult tasks, for me it would be anyways. All of the above, however, look sinful!

Your husband needs to talk to my husband and learn how to eat what his wife eats at home. I have to cook the meat for him and the veggies for me and we don't eat the same thing at all, but I cook two meals. Ugh. A. Pain.

But .. I will bet you dollars to donuts that he would eat these treats without complaining one little bit.

I have a question (insert raised hand)? How do you bake these goodies without milk or eggs? They do look wonderful. I wouldn't mind a vegan treat one bit! Glad you found some goodies you can eat, because life is not complete without goodies. ;-)

Hi, I've come to you from The Gardener's Cottage. I've been a pescatarian since February. I don't know if I can go all the way to vegan just yet.
Did you just go to being vegan, or did you start slowly? The sweets look amazing. I'll have to try them out on my boys and not tell them their vegan.

I'm thinking that MMMC should bake up some of those black and white cookies (you'll have to send her the recipe, of course) and Annie and I should go visit her and eat some in your honour. It's all about you, you see. And does vegan equate with less fattening? I'll have to send you Cathie's recipe for vegan cupcakes. Delish.
