I'm Beet(s).

Long ago I used to make pickles prodigiously.   Now, not so much.  However, this week I had lots of wonderful organic beets to consume so I decided to pickle some.
I forgot how long it takes to make pickles.
I did them all by myself whilst Mr LC dozed in his cozy chair.
If anyone doesn't believe I did these up myself, I now have a pink kitchen to prove it.

I have never canned anything in my whole life. I do love pickles very much and always have them on hand. I love beets too. I'm impressed and yes I believe you:)

Sounds like retirement is working out for him. While I'm not the biggest beet fan, I do like them pickled. Pickling is the one thing from my past that I don't care to continue. Although my mother used to make some killer dilled green beans.

What do you put those beets on now? Sandwiches?

Your beets look awesome and I believe you, too.
Aren't they a mess to clean up. I cook them in the oven but I am so messy it does not make much difference...

Beautiful jars! These look as if they could be found in an expensive gourmet shoppe. Did you know Australian's commonly put beetroot in their salad sandwiches and burgers. Yes! A burger with the lot has beetroot slices.
